Things have been great. Super busy, but great. I'm currently living in Austin: the only premium city in the musty colon known as Texas. The weather hear is severly below par and not particularly to my liking, but hey, what can you do? I'm attending TCA, Texas Culinary Academy Le Cordon Bleu for education in Baking and Patisserie. It's amazing. I'm learning tons and enjoying myself even more. Top of my class, creating the most stunning food.
I'm hoping to be working for Disney by the end of September, working as an assistant pastry chef in a high-end resort restaurant. Cross your fingers! I've been through the interview and at this point it's a waiting game. I feel very confident. I'm good at what I do and I know that I can be good at whatever they ask me to do at Disney. I'll be woking for the Mouse in Florida for at least months if I get picked up.
Zach's hopefully going to be picking up a job from either Vertigo, or Oni publishers. He had interviews last week with DC & Marvel and got phenomenal feedback, telling him to start sending in pages to show them what he can do. That's much more than other people got. Most of the time at these interviews it's: "uh.. yeah. you need ALOT of help. See you next time.." Instead, he was given business cards and told, start sending your work. This is huge because DC and Marvel don't accept unsolicited pages for submission. They've just open the door for him, all he needs to do is step in and begin to send his work.
I'm getting married in 5 weeks. Five, f'ing weeks. I never knew that time could slip away soo fast. I'm going to be hard pressed to find a spare minute in the next month so I figured that now was as best a time as ever to update this journal which I haven't written in for the last 9 months. Zach and I will be tying the knot in Denver, Colorado at the end of June. I couldn't be happier. I know that I'm going to spend the rest of my life with this man and I couldn't ask for anything more. I didn't know it was possible to feel such things. As cliche as it sounds, it's indescribable.
Zach and I are currently living an eco/animal/earth friendly life togethe; vegan, straightedge and recyclaholics. I'm secretly addicted to Whole Foods.
We're moving into a new place in the next couple of weeks and I can't wait! I've been living with carnivoresfor the last 5 months. Needless to say, I'll be glad to be living in a home where I don't have to worry about a dead chicken sitting next to my food in the fridge. I'm excited to not smell the stench of beef coming from the kitchen; it makes me gag.
I think I'm at my ideal weight. Sure, I always could lose more, but I'm at the point where if I lost any more, I'd look like an anorexic mess. I feel healthy for the first time in a long time. I feel good about how I look. I feel energetic, alive, less sluggish and more than anything, I feel good about the food choices that I make, knowing that they aren't promoting cruelty towards animals or creating more waste than absolutely neccesary.
Ahimsa is the name of the game in our lives. It's a term that refers to the general reverence towards the treatment of animals. The law of Ahimsa is one that prevents cruelty and the killing of animals. It's a basic belief of the Jain philosophy in which one respects and tries to promote life as much as possible. I won't say that I'm a practicing Jain, but I will say that I try my best to not hurt any living thing. I feel horrible when, while walking my dog, I step on a bug. It sounds crazy, but I have such love and respect for living things that I can't stand the idea of a life ending because of me.
Oh, I found a puppy. Remy's a black lab who has way too much energy, the biggest eyes and the sweetest disposition. He loves humans and non-humans alike. The only complaint- without fail, every morning from 5:30am to 6am, it's time to bark non-stop. We still have our cats, Rabbit and Stan, smothering us and shoving cat-hair into our noses as usual.

I miss you too, hon. I have soo many great memories of high school and hanging out with you. I wish that you could see me now! I'm half the woman I used to be, physically. I'm tattooed all over... Maybe one day I'll come back to the Island and visit you!! I don't know when I'll be back in town. Probably not for a couple more years, but hopefully at one point.
